SDGs「1.5℃の約束」。23日紹介するのは、柿の皮で作るピューレです。

長野県飯田下伊那地域の名物「市田柿」。

柿7000トンを加工すると、1000トンの皮が廃棄され、処分費用も大きな負担になっていました。

そこで松本大学と高森町、食品会社などが連携してピューレを開発。

甘みが特徴で飲食店や食品メーカーの利用が期待されています。

廃棄物を減らすのも温暖化防止への一歩です。
