ブドウ農家とショコラティエがコラボレーション
秋の味覚「ブドウ」を使った新感覚スイーツです。長野県須坂市のブドウ農家が、チョコレート店とコラボ。付加価値をつけて新たなブドウの魅力を発信しています。

「立派に実ったシャインマスカット。それがなんと、チョコレートになっちゃいました。美しいですね」
まるで宝石のようなおしゃれなチョコレート。今シーズン、須坂市の農家とショコラティエがタッグを組んで作った新商品です。
いわぶちふぁーむ・渋谷光太郎さん
考案したのは須坂市のブドウ農家・渋谷光太郎さん。もちろんそのまま食べてもおいしい自慢のブドウですが、新たな食べ方がないか商品開発に取り組んできました。

「シャインマスカットを食べて甘さもあるし、香りがあったりとか、そういうブドウなので、それに『チョコレート』が加わったら、よりまた違う楽しみ方ができるんじゃないかと思って」
＆ chocolate(長野県須坂市）
そこで、協力を依頼したのが、市内の専門店「＆ chocolate（アンド チョコレート）」です。
「＆ chocolate」は今年1月にオープン。上質なカカオで作るチョコを提供し人気となっています。これまでも地元のお店とコラボしたことはありましたが、今回は、特に難しい挑戦だったと言います。

「シャインマスカットの香りを生かしてチョコレートをうまく組み合わせてくれっていうふうに言われたので、そもそもチョコレートと生のフルーツっていうものが相性が難しいので、どうしようかなっていうふうにはなりました。メインはブドウになるのでチョコレートとブドウを合わせて、どういうふうになっているのか、どんな味わいになっているのか、香りだとか楽しんでいただけたらいいなと」
使用するのは、いわぶちふぁーむのシャインマスカットと種なし巨峰。ブドウを引き立たせるため、カカオ58%の甘味と苦味のバランスの良いチョコを薄くコーティング。見た目にもこだわりました。
